The Clover Club cocktail is a classic gin-based cocktail that has been enjoyed for over a century. It is a pre-Prohibition era drink that was invented at the Bellevue-Stratford Hotel in Philadelphia, Pennsylvania in the late 19th century. The drink was named after the Clover Club, a men’s social club that was popular in Philadelphia at the time.
The Clover Club cocktail is made with gin, lemon juice, raspberry syrup, and egg white. The gin provides a strong, juniper-forward base for the drink, while the lemon juice adds a tangy acidity that helps to balance out the sweetness of the raspberry syrup. The egg white adds a silky texture and a frothy head to the drink, as well as a subtle richness.
To make a Clover Club cocktail, start by chilling a cocktail shaker and a martini glass. Then, add 2 ounces of gin, 3/4 ounce of lemon juice, 3/4 ounce of raspberry syrup, and 1 egg white to the shaker. Shake the ingredients without ice to emulsify the egg white, this is called a “dry shake.” Then add ice to the shaker and shake again until well chilled. Strain the drink into the chilled martini glass and garnish with a raspberry or lemon twist.

One of the key elements of the Clover Club is the use of raspberry syrup. The original recipe calls for raspberry syrup made from fresh raspberries, but it can also be made from raspberry preserves or raspberry liqueur. The syrup adds a sweet and fruity flavor to the drink, which complements the gin and lemon juice. The syrup can be made by heating fresh or frozen raspberries with sugar and straining the mixture.
The Clover Club is a classic gin-based cocktail that has stood the test of time. It is a delicious and elegant drink that is perfect for sipping on a warm summer evening or for impressing guests at a dinner party. The use of raspberry syrup, lemon juice, and egg white make for a unique and tasty drink.
